Ultra Chocolate Fudge Brownie Cake

Ingredients
- 1 box chocolate fudge cake mix
- 1 box chocolate fudge brownie mix
- 2 boxes chocolate fudge instant pudding mix
- 1 C. sugar
- 5 eggs
- 1/2 lb. butter, melted or very soft
- 1 C. sour cream
- 1 lb. Ricotta cheese
- 2 C. milk, white or chocolate
- 1 12-oz. pkg. mini chocolate chips
- spray oil
- flour
- 3 cans chocolate fudge icing
- 1 can coconut pecan icing

Pre-heat oven to 350. In a very large bowl, combine all wet ingredients and mix well with electric mixer. Add all dry ingredients and mix well. Spray oil on two 9" x 15" cake pans and dust with flour. Divide batter into them. Place on center rack and bake for 1 hour to 1 hour and 15 minutes. Test for doneness with toothpick- it should come out clean.
When done, remove from oven and place on cooling racks for 2 hours, then place in refrigerator at least 2 hours before icing. While baking, the cakes will rise and when cooling, they will fall forming a shallow well with high edges. Place the first cake on a serving platter right-side up. Fill the well with coconut pecan icing then chocolate fudge icing. Trim top edge of second cake to make it flat-topped. Place on first cake and finish with 2 cans chocolate fudge icing.
