  • 2 large eggs
  • 2 large egg whites
  • 3/4 C. water
  • 1/2 C. milk
  • 1 T. canola oil
  • 1 C. all-purpose flour
  • 1 T. sugar
  • 1/2 tsp. salt
  • 2 T. butter
  • 2 T. brown sugar
  • 4 bananas, peeled and sliced
  • 1/3 C. Nutella

In a large bowl, whisk together eggs, additional egg whites, water, milk, and oil. In another bowl, mix together flour, sugar, and salt. Combine with egg mixture and stir well. Refrigerate for one hour. Grease a large skillet and heat over medium heat. Pour 1/4-cup of the chilled batter into the skillet. Cook until the top looks dry, turn, and cook for another 10 seconds. Transfer to a cooling rack. Repeat with the remaining batter. In a smaller skillet, melt butter over medium-low heat. Whisk in brown sugar. Once melted, add bananas and cook until softened and warm. Spread each crepe with Nutella and top with bananas. Serve immediately.
