  • 8 C. cake flour
  • 4 tsp. baking powder
  • 3 tsp. baking soda
  • 2 tsp. salt
  • 4 sticks margarine, unsalted
  • 2 tsp. vanilla extract
  • 8 large eggs
  • 4 C. half & half cream
  • 1 can vanilla frosting
  • Lemon Glaze:
  • 1 C. powdered sugar
  • 2 tsp. lemon juice
  • 1 tsp. vanilla

Preheat oven to 350 degrees F. In a medium bowl, mix flour, baking powder, baking soda and salt. Beat butter and sugar in a large bowl with an electric mixer until fluffy. Add in vanilla. Beat in eggs, one at a time. Using the electric mixer on low speed, beat in half & half while stirring. Flour and grease two 9-inch cake pans. Pour batter in cake pan. Bake for 35 to 40 minutes.

Once cakes are done and cool, spread vanilla frosting on one cake and then top the other one on top to make a sandwich. For vanilla glaze, mix the powdered sugar, lemon juice, and vanilla in a small bowl. Combine well. Pour glaze on top of cake. If you desire, add lemon gummy candies for an extra topping.
