These vanilla no bake cookies are a treat! Garnished in coconut flakes, these vanilla balls deliver on presentation and taste.

  • 1 1/2 cups cashews
  • 3/4 cup quick-cooking oats
  • 3 tbs pure maple syrup
  • 2 tbs brown rice syrup
  • 1 tbs pure vanilla extract
  • 1 cup coconut flakes

Use a food processor to grind the cashews and cooking oats together. They should be like flour after.
Put the mix in a medium bowl and add the remaining ingredients. Blend well.
Make the dough into balls.
Put coconut flakes in a bowl and coat the balls with them.
Place dough balls.on an foil lined and greased cookie sheet.
Freeze for 2-4 hours.
