Vanilla Cornstarch Pudding
Ingredients
- 2 C. milk
- 1/4 C. sugar
- 3 Tbs. cornstarch
- 1/4 C. sugar
- few grains salt
- 1/2 tsp. vanilla
Directions
Scald milk, leaving about 2 Tbs. in C. Mix cornstarch, sugar and salt with cold milk. Add scalded milk to this mixture, stirring until blended. Re¬turn to double boiler. Cook 10 minutes and remove from heat, cool. Add vanilla. Pour into individual moulds or into one large mould which has been rinsed in cold water. Chill.
Suggestion: Less cornstarch may be used to make a thinner pudding which will not mould.
Variations Serve with milk, cream, soft custard, chocolate sauce, fruit sauce, or garnish with bananas or crushed fruit. For chocolate pudding, follow the same recipe adding 3 Tbs. cocoa and 2 additional Tbs. sugar.
