Vanilla Macarons

- 1 ¾ cups powdered sugar
- 1 cup almond flour
- ¼ cup white sugar
- 3 eggs
- ½ teaspoon vanilla extract
- Vanilla frosting

Line two baking sheets with parchment paper. Process the powdered sugar and flour in a food processor for 40 seconds. Use an electric mixer to whip the egg whites on medium-high speed and when soft peaks form, gradually add the sugar and vanilla. Whip until stiff peaks form. Fold the flour mixture into the egg whites. Do not overmix. Fill a piping bag with a small round tip with the macaron batter. Pipe small circles onto the prepared baking sheets. Let the macaron shells rest for 30 minutes. Gently spread vanilla frosting on half of the shells and then assemble the macarons.
