Vanilla Wafer Cake

This is so yummy with ice cream...vanilla, butter pecan, rum raisin... your mouth will be watering!

Ingredients

  • 1 C. butter or margarine
  • 6 eggs
  • 1/2 C. milk
  • 2 C. sugar
  • 16 oz. vanilla wafers, crushed into crumbs
  • 8 oz. Angel Flake coconut
  • 1 C. chopped pecans
  • Powdered sugar

Directions

Preheat oven to 300 degrees. Grease a 9" bundt pan well. Cream butter and add sugar. Beat until smooth. Add eggs, one at a time. Beat batter well after each egg. Stir in vanilla wafer crumbs a bit at a time alternating with milk. Add coconut and pecans. Pour batter into prepared pan. Bake 1 1/2 hours. Cool completely before taking out of pan. I loosen the cake from the pan with a narrow rubber spatula and/or a table knife. It can stick to the pan so take your time. Put the cake plate on top and turn over. Release. Powder with the sugar.
