Veal Cutlets Parmigiona

A spectacular veal recipe for a fancy dinner or fun family meal!

Ingredients

  • 4 veal cutlets
  • salt
  • pepper
  • flour
  • 2 eggs, beaten with 2 Tbs. cold water
  • bread crumbs
  • grated parmesan cheese
  • salad oil
  • 1/2 lb. mozzarella cheese
  • 8-oz. can tomato sauce
  • 1/4 tsp. oregano
  • paprika

Directions

Season cutlets with salt and pepper. Dip in flour, eggs and thin crumbs. Chill one hour. Saute cutlets in 1/4-inch of salad oil in electric skillet at 300 degrees until golden brown. Place cutlets in a greased shallow baking dish. Slice cheese and place over cutlets. In a small sauce pan, combine tomato sauce and oregano. Bring to a boil and pour over cutlets. Sprinkle cutlets with grated parmesan cheese, then paprika, and salad oil. Bake in oven at 350 degrees for 20-25 minutes or until cheese turns brown.
