  • 1/4 C. extra-virgin olive oil
  • 1/4 C. green onions, chopped
  • 2 garlic cloves, minced
  • 4 celery stalks, sliced
  • 2 carrots, thinly sliced
  • 1 lb. veal cutlets, cut into 1-inch strips
  • 2 Tbs. fresh parsley, chopped
  • 1/4 C. dry white wine
  • 1/2 C. black olives, sliced
  • 2 Tbs. lemon juice
  • 1/4 C. real bacon bits or crisp-cooked bacon pieces
  • salt and pepper to taste

Sauté green onions and garlic in olive oil for 2 minutes. Add celery and carrots and simmer over medium heat for 10 minutes. Remove vegetables from pan and set aside. Sauté veal strips in remaining oil until tender. Return vegetables to pan. Add parsley, wine, black olives, lemon juice, bacon bits, salt, and pepper, and simmer over low heat for 10-15 minutes. Serve over rice or hot noodles.
