Veg-All Casserole

I received this recipe from a friend from Nashville, TN several years ago. I made it for my family and they always ask for it now.

Ingredients

  • 2 cans Veg-All (drain)
  • 1 can water chestnuts (diced)
  • 1 medium onion (diced)
  • 1 C. mayonaise
  • 1 C. ceddar cheese (shredded)
  • 1 stack crumbled Ritz crackers
  • 1 stick melted butter

Directions

Mix the first 5 ingredients in a casserole dish. And, top with the crumbled crackers and drizzle the melted butter over top. Bake at 400 degrees for 30 minutes

  • This recipe is very good and goes with anything...But...one change you may like to try...cut the mayo to 1/2 a cup (I use Miracle Whip) and add one can of cream of mushroom soup...you can also add a can of fried onions - half in the mix and half to the top mixed with the crackers...and I do not drizzle butter. I made it tonight with roast beef...yummy!
