Ingredients

  • 1/3 C. water
  • 1 tsp. flax seeds
  • 1/2 C. vegan butter
  • 1/2 C. creamy peanut butter
  • 1 C. vegan sugar crystals
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. pumpkin pie spice
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 C. white flour
  • 1/2 tsp. apple cider vinegar
  • 1/2 C. coarse sugar crystals

  1. Preheat oven to 350 degrees.

  2. Whisk together the 1/3 C. water and 1 tsp. flax seeds and set aside.

  3. In a large mixing bowl, beat together the butter, peanut butter, 1 C. sugar crystals, vanilla extract, cinnamon and pumpkin pie spice until smooth.

  4. Beat in the water and flax seed mixture, baking powder, baking soda, salt and 1 C. flour.

  5. Add the apple cider vinegar.

  6. Roll dough into balls and dip into the coarse sugar crystals. Place on baking sheet.

  7. Bake for 12-14 minutes.
