While chilaquiles normally use corn tortilla strips for texture, why not mix it up and use some tater tots instead? These chilaquiles have a unique, savory bite thanks to the bed of tater tots while keeping their spicy, Mexican flavor!

  • 1 package tater tots
  • 1 can red chile sauce
  • ΒΌ cup chopped white onion
  • 1 can black beans
  • 2 garlic cloves, halved
  • 2 tablespoons chopped green onion
  • Avocado, sliced
  • Salt to taste

Bake the tater tots per the package instructions.
Heat the chile sauce in a large saute pan on low heat, stirring the whole time, until it coats the back of a spoon. Add garlic cloves. Salt to taste.
Stir in the beans and heat through. Add the tater tots and stir in until well combined.
Pour the mixture onto a plate. Top with avocado, green onion and white onion.
