Vegetable and Bacon Braised Beef

Ingredients
- 2 Tbs. dried mushrooms
- 1 slice bacon
- 1 sm. onion
- 1 celery stalk
- 1 tsp. chopped parsley
- 1 sm. carrot
- 4 lbs. beef round eye
- 1 Tbs. lard
- 1 C. dry red wine
- salt
- pepper
- 2 C. water
Directions
Soak mushrooms in cold water for 30 minutes. Chop bacon and vegetables finely. Place meat in saucepan with lard and chopped ingredients, mushrooms and 3/4 of the wine and cook until wine has evaporated. Add the rest of the wine, salt and pepper to taste. Cover saucepan and cook until rest of the wine has evaporated and the meat and vegetables are well-browned. Add the water, cover pan and cook for 2 hours. Slice meat and serve with the gravy.
