  • 1 lb. chicken breast, boneless and skinless
  • 1 Tbs. vegetable oil
  • 4 Tbs. butter, melted
  • 1/4 C. buttermilk
  • 1 (5-oz.) bag vegetable chips
  • Salt and pepper to taste
  • Garnish with lemon, if desired

Preheat your oven to 375 degrees F. Grease a pan with oil. Set aside. In a bowl, mix butter and buttermilk. Toss in chicken until coated well. Use a food processor to pulse chips into crumbs. Place in mixing bowl. Dip chicken in crumbs and firmly pound the crumbs into the chicken. Repeat with remaining chicken. Place chilis on baking sheet. Add chicken inside each pepper. Sprinkle with salt and pepper. Bake for 25 to 30 minutes.
