  • 2 tsp Olive Oil, divided, and 1 tbsp olive oil
  • 2 Small Zucchini, sliced thinly
  • 1 cup Fresh Spinach
  • 1 cup Cherry Tomatoes, halved
  • 2 Tbsp Extra Virgin Olive Oil
  • 5 Basil Leaves, chopped
  • 2 Garlic Cloves, grated or crushed
  • ¼ tsp Sea Salt
  • ¼ tsp Red Pepper Flakes
  • ¼ Cracked Black Pepper
  • 1 inch Squares Asiago Cheese

Start by greasing the casserole dish with 1 tsp olive oil.
Add veggies, basil, garlic and 1 tbsp olive oil and toss together in a bowl.
Put mixture in casserole dish.
Top vegetables with squares of asiago cheese.
Bake in a preheated 375 degree oven for about 35-40 min.
