  • 2 tsp. olive oil
  • 1/2 C. onion, diced
  • 1/2 C. carrot, diced
  • 1/2 cup celery, diced
  • 2 tsp. chicken bouillon granules
  • 1 C. jasmine rice
  • 1 3/4 C. water

Heat the olive oil in a sauce pan over medium heat. Add the onion, carrots, and celery and cook, stirring occasionally until the vegetables are tender. Add the rice and bouillon granules to the pan. Cook and stir for 5 minutes. Add the water. Reduce heat to a simmer and cover. Cook for 20 minutes or until rice is soft. Let stand for 5 minute and then fluff with a fork. Serve with grilled chicken or fish.
