  • 1 lb. lo mein noodles (spaghetti is a good substitution)
  • 2/3 C. shiitake mushrooms, thinly sliced
  • 1/2 C. vegetable broth
  • 1 1/2 C. broccoli florets
  • 1 C. red bell peppers, sliced
  • 2/3 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/3 C. soy sauce
  • 1 Tbs. red pepper flakes

Cook noodles in boiling water, then drain, run under cool water, and set aside. In a preheated pan, cook the onions, garlic, mushrooms, and bell peppers for about 5 minutes. Stir in broccoli and continue cooking. Pour in broth, cover pan, and cook for an additional 4 minutes. Remove pan and stir in noodles and soy sauce, letting cook for 4 more minutes. When broth is almost gone, remove from heat and serve.
