This is great as a side dish or as a meal when you want something healthy, vegetarian, and easy. You can easily add other vegetables, if you want too, as well.

  • 8 unpeeled yellow squash, thinly sliced
  • 1/2 teaspoon salt
  • 2 chopped tomatoes
  • 1/2 green bell pepper, chopped
  • 1/4 cup sliced green onion
  • 1 cup broth
  • 1/4 cup fine dry bread crumbs

Sprinkle sliced squash with salt. In crock pot, arrange alternate layers of squash with tomatoes, green pepper, and onions. Pour broth over. Top with bread crumbs.
