Vegetable Minestrone

Ingredients
- 1 tsp. olive oil
- 1/8 lb. salt pork, chopped
- 1/2 garlic clove, chopped
- 1/2 med. onion, chopped
- 1 tsp. chopped parsley
- 1 tsp. chopped sage
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbs. tomato paste
- 3 celery stalks, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 C. cooked pea beans
- 1/4 sm. cabbage, shredded
- 2 zucchini diced
- 1 C. shelled peas
- 1 1/2 qts. water
- 1 C. elbow macaroni
Directions
Put olive oil in a large soup pan. Add salt pork, garlic, onion, parsley, sage, salt and pepper and brown. Add tomato paste diluted in 1 C. water. Cook for 5 minutes. Add vegetables and 1 1/2 qts. water and cook for 45 minutes. Add macaroni and cook 10 more minutes.
