  • 2 Tbs. Eden Selected Extra Virgin Olive Oil
  • 1 med. onion, diced
  • 3 cloves garlic, chopped
  • 1 Tbs. dried rosemary
  • 2 whole bay leaves
  • 1 C. carrots, chopped
  • 2 med. potatoes, chopped
  • 6 C. water
  • 1 28-oz. can Eden Organic Crushed Tomatoes with Basil
  • 1 can Eden Organic Great Northern Beans
  • 1 pkg. Eden Organic Vegetable Ribbons
  • 1 C. sweet corn, fresh or frozen
  • 1 C. green peas, fresh or frozen
  • 2 tsp. Eden Sea Salt
  • 1/4 tsp. freshly ground black pepper

Heat oil in a soup pot, sauté onions and garlic until onions are translucent. Add herbs and sauté briefly. Add carrots, potatoes, water, tomatoes and beans. Cover and bring to a boil. Reduce the flame to medium-low and simmer 20 minutes. Meanwhile cook pasta as package directs, rinse and drain. Add corn, peas, salt and pepper. Cover and simmer 5 minutes. Place pasta in each bowl, top with soup and serve.
