Ingredients

  • 2 C. vegetable broth
  • 1 1/2 C. water
  • 2 C. cauliflower
  • 1 C. baby corn
  • 1 C. green beans
  • 1 carrot, cut into
  • 1 Tbs. tomato paste
  • 2 tsp. oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme
  • 1/3 tsp. chili flakes

Directions

Heat the oil in a saucepan and cook onions in it for about 5 minutes. Add in the garlic, chili flakes, carrots, green beans, thyme, and salt and cook for an additional 5 minutes. Stir in tomato paste and continue cooking for 1 more minute. Stir in cauliflower, baby corn, vegetable broth, water, and bay leaf and let simmer, partially covered, for 15 minutes. Season with salt and pepper and serve.
