This is paella made with artichokes, peas, red peppers and rice. It is filled with many colors of delicious veggies!

  • 5 stalks of asparagus, sliced
  • 1 1/2 tablespoons olive oil
  • 1 red bell pepper, diced
  • 1 cup brown mushrooms, Sliced
  • A ¼ up of garlic powder for taste
  • 1 cup bomba rice
  • 2 cups vegetable stock
  • A ¼ cup of onion powder
  • 1/4 tsp saffron powder
  • salt and pepper to taste
  • ½ cup green peas, drained
  • 1 can Artichoke Hearts, drained and chopped
  • 1/2 cup Parsley, chopped

In a medium pot, heat the vegetable stock until boiling, seasoning with a pinch of salt and saffron. Once the water starts to boil add the bomba rice and cover the pot with a lid. Lower the flame to a simmer and let the rice cook for about 20 minutes.
Steam the asparagus until it become nice and soft.
In a pan, add bomba rice, olive oil, onion powder, garlic powder, red pepper, mushrooms, peas, and artichoke hearts, salt and pepper, and Sautee until it becomes soft.
Then add the asparagus and the parsley and sprinkle evenly around the paella.
Mix the paella together until well combined, and then serve!
