Vegetarian baked pasta with marinara and cheese. A nice, warm, quick dish for a cold night!

Ingredients

  • 16 oz. penne pasta
  • 1 med. onion
  • 3 cloves garlic
  • olive oil
  • 1 can of diced tomatoes
  • about 1/8 C. chopped fresh basil
  • 1 C. Parmesan cheese
  • 1 C. Pecorino cheese

Cook penne pasta. Saute onion and garlic in olive oil. Cook well, until onions aren't crunchy.  Add diced tomatoes and about 1/8 cup of chopped fresh basil, and cook a little longer. Grate Parmesan and Pecorino cheese. Create 3 layers in a casserole dish: marinara sauce (thin layer), pasta and saute mix, and cheese.  Bake 350 at for 30 minutes.
