Vegetarian Black Bean Nachos

Ingredients

  • 1 can black beans or black soybeans, rinsed and drained
  • 1 avocado, pitted and chopped
  • 1 C. salsa or picante sauce
  • 2 roma tomatoes, finely chopped
  • 1 C. frozen corn kernels, thawed
  • 2 C. shredded cheese (Mexican blend, cheddar, or Monterey Jack)
  • blue corn tortilla chips
  • cooking spray
  • sour cream, optional

Directions

Preheat oven to 425 degrees. Spray large cookie sheet with cooking spray and spread tortillia chips evenly over sheet in a single layer. Combine all other ingredients except cheese and sprinkle evenly over chips.Sprinkle cheese over all. Put in over and heat until the cheese melts and toppings are heated through. May serve with sour cream if desired.
