  • 1 lb of red beans
  • 1 c. of tomato paste
  • 1 c. of vegetable broth
  • 1 c. of zucchini, chopped
  • 1 c. of crashed tomatoes
  • 1 c. of sweet corn
  • 1 onion, chopped
  • 1 tsp of chili powder
  • 1 garlic, minced
  • 1 tbsp of olive oil

In a medium skillet, brown onions until golden brown. Add garlic, one egg, and cook for 2 minutes. Add red beans, and stir thoroughly. Season with chili powder. Stir in vegetable broth and tomato paste. Cook, covered for 30 minutes, stirring occasionally. Add zucchini, corn and tomatoes, and continue cooking for another 30 minutes. Serve.
