  • 1/2 C. hummus
  • 2 red peppers, sliced
  • 6 oz. couscous
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • 8 oz. havarti cheese, sliced
  • 1/2 C. cherry tomatoes, halved
  • 8 leaves of leaf lettuce
  • 1 Tbs. lemon juice
  • Tortilla wraps

Sauté peppers in saucepan with very little water for 8 minutes. Mix couscous with spices in bowl. Pour over hot peppers. Cover and leave to stand for 5 minutes. Mix tomatoes and lemon juice into couscous. Spread a few tsp. on the tortillas and add mixture to tortillas and top with cheese. Wrap tortillas and serve.
