Ingredients
- 1/2 C. green bell peppers, chopped
- 1/2 C. onions, chopped
- 1/2 C. spinach, chopped
- 2 Tbs. olive oil
- 1 dozen eggs
- 1/2 C. half & half
- 1 C. cheddar cheese, grated
- Salt and pepper to taste

Directions
Sauté peppers, onions and spinach in a large skillet in olive oil over medium heat. Beat eggs with half & half in a small bowl. Combine vegetables, mixture and remaining ingredients in crockpot. Cook on low overnight.
