  • 1 C. liquid egg whites
  • 2 Tbs. onion, chopped
  • 1/4 C. vegetables, sliced
  • 1/4 C. reduced fat sharp cheddar cheese, shredded
  • 1/2 tsp. garlic powder
  • 1/4 tsp. paprika
  • salt and pepper, to taste

Preheat the oven to 400 degrees and grease an 8-in. skillet. Set the skillet over medium high heat. In a bowl, whisk together the egg whites, cheese, garlic powder, paprika, salt and pepper.

Saute the onions in the skillet for 2 minutes, or until they become tender. Turn down the heat to medium and pour in the egg white mixture. Top the egg white with your vegetables and cook for 2 to 3 minutes, until just the edges of the egg whites have set. Transfer the skillet to the oven to finish cooking, about 3 to 4 minutes.
