  • 2 eggs
  • 2 cups cooked quinoa
  • ½ avocado
  • ¼ cup pesto
  • ¼ cup pine nuts
  • 2 tablespoons pine nuts
  • 3 tablespoons hemp seeds
  • 2 cups basil leaves
  • 1 cup kale leaves
  • 1 garlic clove
  • 1 teaspoon lemon juice
  • 3 tablespoons olive oil

Pour about an inch of water into the bottom of a saucepan and bring the water to a boil. Add the eggs, cover the pot and reduce the heat, simmering for 5 minutes. Rinse the eggs under cold water for a few minutes. Add the garlic, pesto, 1/4 pine nuts, basil, kale, lemon juice, and olive oil to a food processor and blend until the pesto sauce reaches your desired consistency. Begin assembling each bowl with 1 cup quinoa, thin slices of avocado, and half the pesto sauce. Peel the eggs and slice them in half. Each bowl gets 1 egg. Sprinkle with seeds and remaining pine nuts and enjoy.
