  • 3/4 cup spinach
  • 1 leek
  • 1 ¾ cup red bell pepper
  • ¼ cups red onion
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 8 eggs

Begin by dicing the red pepper and onion and cutting the leek into ¼ inch half-moons. Individually beat each egg. Combine the spinach, pepper, onions, leek, eggs, pepper, and salt in the greased crockpot. Cook on low for 2 hours or longer until the frittata is set.
