Ingredients

  • 1 package orzo
  • 1 cup extra firm tofu
  • 1 cup peas
  • 1 cup corn kernels
  • 1 chives
  • 1 red bell pepper
  • ½ stick butter
  • Cooking spray
  • ¼ cup shredded parmesan
  • Salt and pepper

Prepare orzo according to package instructions. Slice the bell pepper. Set a large pot of water to a boil and add in the corn, peas, and bell pepper and steam for 10-15 minutes. Drain the vegetables. Cube your tofu and pan fry in a greased skillet for 3-4 minutes on each side. Microwave the butter until melted and whisk in the parmesan until melted and mixed into the butter. While the orzo is still warm, pour it into a casserole dish with the tofu and vegetables. Pour the sauce on top and serve!
