This is one vegetarian dish that won’t leave you searching for more. A casserole with melted cheesy goodness you could ask for but with just as many veggies so you don’t have to feel bad.

  • 3 C. uncooked penne pasta
  • 2 C. button mushrooms, sliced
  • 1 red onion, chopped
  • 1 zucchini
  • 2 C. cherry tomatoes, halved
  • 1 clove garlic
  • 1 can tomato pasta sauce
  • 2 cups grated mozzarella cheese
  • Fresh basil to garnish

Preheat oven to 400 degrees. Cook penne according to packaging instructions and drain.

Saute chopped mushrooms, zucchini, and red onion until soft. Mix in cherry tomato halves, minced garlic, and pasta cause. Combine cooked penne with sauces and transfer to a greased baking dish.

Cover the casserole with grated mozzarella cheese and bake for 20-25 minutes or until the cheese is melted. Garnish with basil and serve.
