Serving Size / Yield

6-8 servings


  • 1 packet spaghetti
  • 2 tbps butter
  • 2 tbsp olive oil
  • 2 tbsp minced garlic/2 cloves of garlic, chopped finely
  • 1/2 large brown onion, diced
  • 1 large winter squash, sliced into ¼ inch sections
  • 1 lb fresh mushrooms, sliced
  • ½ cup thickened cream
  • Grated parmesan, to serve

Set spaghetti to cook in boiling water according to packet instructions or until al dente. Drain and return to the pan. In a medium skillet, heat half of the butter and olive oil and add garlic, onion, squash and mushrooms. Cook, stirring frequently until mushrooms and squash are soft. Pour in thickened cream and stir well. Cook on low to medium heat for another 8 minutes, until the sauce has thickened. Plate the pasta and cover with mushroom mix. Top with grated parmesan and serve.
