Vegetarian Sausage Patties

My mama came up with this recipe so that we could use up the black-eyed peas we had picked and also so we could have something that tasted like sausage to go with our biscuits and eggs. These mock sausage patties taste almost identical to real sage sausage patties, but they are low in fat and high in fiber.

Completely drain black-eyed peas, reserving liquid. Mash peas until they are very smooth, add spices, cayenne pepper, seasonings, salt, and Tabasco sauce. Mix well. Add flour until mixture is thick enough to form patties and hold their shape. Form into patties and fry in hot skillet with light coating of oil until brown and crispy. Be sure to keep pan lightly coated because the patties will absorb the oil. Do not put a lot of oil in pan for the same reason. For best results, spray skillet with pan spray before adding oil.
