Vegetarian Sausage Patties
Ingredients
- 1 lb. dried black-eyed peas, cooked until very tender
- 3 tsp. onion powder
- 3 tsp. garlic powder
- 2-3 tsp. cayenne pepper
- 3-4 tsp. ground sage
- 2 tsp. dried minced parsley
- 2 tsp. Italian seasoning
- Salt to taste
- 3-4 drops Tabasco sauce
- Enough flour to form patties
Directions
Completely drain black-eyed peas, reserving liquid. Mash peas until they are very smooth, add spices, cayenne pepper, seasonings, salt, and Tabasco sauce. Mix well. Add flour until mixture is thick enough to form patties and hold their shape. Form into patties and fry in hot skillet with light coating of oil until brown and crispy. Be sure to keep pan lightly coated because the patties will absorb the oil. Do not put a lot of oil in pan for the same reason. For best results, spray skillet with pan spray before adding oil.
