Vegetarian Stuffed Peppers
Serving Size / Yield
- 2 Large Red Bell Peppers, Cut in Half and Gutted
- 1 Can Refried Beans
- 2 Cups Shredded Cheddar and Colby Jack Cheese
- 1/2 cup chopped onion
- Taco Seasoning
In a skillet, cook refried beans, taco seasoning, and chopped onions on medium heat.
Mix well together.
Place gutted peppers on a cookie sheet.
Spoon in the refried bean mixture.
Cover with shredded cheese.
Put in the over and bake for 10 minutes or until cheese is melted.
