Ingredients

  • 1 package tater tots
  • 1 can cream of celery soup
  • 1 onion, diced
  • ¼ cup finely diced celery
  • ¼ cup finely diced carrot
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons freshly chopped parsley
  • 3 tablespoons half and half
  • ½ cup shredded cheese
  • Salt and pepper to taste

Directions

Preheat oven to 350F.
Sautee onion, carrot and celery in olive oil until tender and translucent.
Add garlic and season with salt and pepper.
Set aside to cool slightly before scraping into a large mixing bowl.
Add soup and half and half and mix well.
Reserve a handful of tater tots and then toss in the rest with the soup mixture.
Lightly grease a casserole dish before pouring in the tater tot mixture.
Line the top with tater tots until it is fully covered, then cover with shredded cheese.
Bake for 45-50 minutes, or until the top is starting to brown.
Garnish with parsley and serve!
