  • 1 C. quinoa
  • 2 C. vegetable broth
  • 1 Tbs. olive oil
  • 1 tsp. sesame oil
  • 1 C. carrots, diced
  • 1/2 C. onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup yellow bell pepper, diced

Cook quinoa and broth in a saucepan over high heat. Bring to a boil and then reduce to a simmer. Cook for about 20 minutes or until the broth is absorbed. Allow to cool completely. In a skillet, heat the oils and add the vegetables. Cook until tender, about 10 minutes. Add the garlic and the quinoa. Cook for about 5 minutes. Serve warm.
