Ingredients

  • 1 Tbsp. vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 2 cans white beans
  • 2 cans crushed tomatoes, undrained
  • 1 C. chopped carrots
  • 1 can vegetable broth
  • 1 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1/4 tsp. salt
  • ΒΌ Tbsp. chopped cilantro

Heat oil in a saucepan over medium high. Cook the onion and garlic 2 minutes until tender. Add the remaining ingredients except for the cilantro. Heat to boiling, then cover and simmer for 30 minutes while stirring. Top with cilantro and serve.
