Pasta with red tomato sauce rather than meat sauce is always a great alternative and this recipe is meat-less and includes a bunch of other great vegetables. Plus the crockpot directions are so simple and stress-free!

  • 1 pound ziti pasta
  • 1 grated zucchini
  • 1 grated carrot (about 1 cup)
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 minced garlic cloves
  • 1 can diced tomatoes
  • ½ cup grated parmesan
  • 2 cups grated mozzarella cheese
  • 1 can tomato sauce
  • 1 teaspoon salt

Set aside 1 cup of the mozzarella cheese and then combine all remaining ingredients in the crockpot. Stir to mix the ingredients together well. Sprinkle the set aside cheese evenly over the pasta in the pot. Then, cook on high for 3 hours and serve.
