  • 3 zucchini, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 2 cups cherry tomatoes, halved
  • 2/3 cup plain Greek yogurt
  • 5oz Brie cheese
  • ½ cup parmesan cheese
  • ½ cup mozzarella cheese, shredded
  • 1 tablespoon lemon juice
  • salt
  • pepper

Preheat the oven to 375F. Heat the oil in a skillet or pan, add the zucchini, garlic and thyme. Cook until starting to soften. Add tomatoes and cook for an additional minute. Remove from heat. In a bowl, combine the egg, yogurt, parmesan, lemon juice, salt and pepper. Stir to combine well and add to a greased baking pan. Add the creamy mixture and then toss lightly to coat well. Dot with the brie cheese and sprinkle with mozzarella. Bake for 40-45 minutes, or until bubbly.
