  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 tablespoon chili powder
  • 1 zucchini, chopped
  • ¼ teaspoon garlic powder
  • 1½ cups tomato juice
  • 1 can condensed golden mushroom soup
  • 3 carrots, chopped
  • 1 can corn, rinsed and drained
  • 1 stalk celery, chopped
  • 1½ green bell peppers, chopped
  • 1 can black beans, rinsed
  • 1 can baked beans

In a medium saucepan, heat the oil and add the onion, chili powder and garlic powder. Cook until the onion is tender and then stir in the tomato juice, soup, carrots, celery and green pepper. Stir and cook, bringing it to a boil. Once the contents start to boil, reduce the heat, cover and cook for 20 minutes, or until the veggies are tender. Add the beans and cook until heated through.
