  • 1 C. asparagus, chopped
  • ¾ C. green onion, chopped
  • ½ C. parsley
  • 1 C. mushrooms, chopped
  • 1 dozen large eggs
  • ¾ C. milk
  • 1 C. biscuit mix
  • ½ C. sour cream

Preheat oven to 350 degrees. Spray bottom of 13 x 9 in. dark coated baking dish with non-stick spray. Line bottom of pan with biscuit mix. Whisk eggs, milk, and sour cream in a medium mixing bowl. Stir in asparagus, green onion, parsley and mushrooms. Pour mixture into pan.

Bake for 35-40 minutes. Insert a knife into the center of the dish. If it comes out clean, the dish is ready. Let stand for 10-15 minutes before serving. Sprinkle salt and pepper to taste. Cut into 12 squares and serve.
