Veggie Casserole

Cauliflower, broccoli and carrots make up this veggie-packed side dish.

Ingredients

  • 1 head cauliflower
  • 1 large bunch of broccoli
  • 5 "finger" carrots sliced (optional)
  • 1 C. mayo
  • 8 oz. bag of shredded cheese
  • 1 tsp. mustard
  • 1/2 tsp. Lemon pepper

Directions

Rinse, cut and steam until done. While these are steaming, chop 1/2 large onion and sauté in butter. Drain broccoli/cauliflower very well. Place 1/2 of the veggies in a deep, greased casserole dish. Mix together sautéed onion/butter, mayo, cheese, mustard and lemon pepper. Spread this decidedly thick mixture over veggie layer. Place the remaining veggies on top. Sprinkle about 4 oz. shredded Cheddar on top. Bake at 350 degrees for about 25 minutes.
