  • Olive oil
  • 1 medium-large sweet onion, diced
  • Salt and ground black pepper
  • red pepper flakes for heat if desired
  • 3 garlic cloves, minced
  • 2 small/medium sized zucchini, diced
  • 1 teaspoon thyme leaves, chopped
  • 1/2 cup small red cherry tomatoes, sliced into halves
  • 3 cups brown rice, cooked
  • 1/2 cup grated Parmesan
  • Handful flat-leaf parsley, chopped
  • 2 large eggs

On medium, add 1 to 2 tablespoons of oil in a large frying pan. Once hot, add onion. Cook, stirring, until translucent and lightly browned at the edges then season with salt and pepper. Add garlic and cook for 1 minute. Add and season with salt and pepper, zucchini and thyme.
Cook, stirring, until softened for about 5 to 8 minutes. Throw in tomatoes and cook for 1 minute. Add a teaspoon of oil then rice. Season well with salt and pepper and cook in pan together until mixed well and a little browned. Add and stir in half of parmesan and parsley.
