  • 1 box Rotini noodles
  • 5 carrots, peeled and chopped
  • 1 onion, chopped
  • I5 oz can of diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 cups water
  • 1 can red beans
  • 3 stalks celery, chopped
  • ½ cup scallions, chopped
  • ½ cup Parmesan cheese, shredded

Add the carrots, onions, celery, tomatoes, salt, pepper and water into the crockpot. Turn it on high and cover, cooking for 5½ hours, or until the carrots are tender. Add the beans, pasta and scallions. Cook for an additional 30 minutes, or until pasta is tender. When serving, top with a sprinkle of Parmesan cheese.
