Simple cheese quesadillas are great enough as it is, but adding these sautéed veggies take the quesadillas to the next level. Your kids will be counting down the minutes until lunch to devour these tasty quesadillas!

Ingredients

  • 1 cup chopped red bell pepper
  • 1 cup chopped mushrooms
  • 1/2 cup chopped red onion
  • 6 tortillas
  • 1 ¼ cup shredded cheddar cheese

Directions

Cook the pepper, mushrooms, and onion with olive oil for 6 minutes in a pan over medium-high heat. Remove the veggies from the heat and spray the pan with cooking spray. Put a tortilla in the pan and sprinkle cheese over the tortilla. Add a layer of the veggies over the cheese and sprinkle with more cheese. Top with another tortilla. Cook for 3 minutes on each side. Repeat with the rest of the ingredients. Cut each quesadilla into 8 triangles and serve.
