Samosas are a South Asian delicacy made by wrapping savory ingredients in pastry and baking or frying. These are vegetarian versions and are a perfect appetizer or light lunch. Serve with some of your favorite chutneys for dipping.

  • 2 pkgs. crescent rolls
  • 4 Potatoes, peeled, boiled, and mashed
  • 1/2 onion, sauteed
  • 1/2 C. frozen peas, thawed
  • 1/2 tsp. Ginger, crushed
  • 1 Tbs. ground coriander
  • 1/4 C. cashews, chopped
  • 1/4 C. raisins
  • 1 Tbs. curry powder
  • Salt
  • chili powder, to taste

Preheat oven to 400 degrees. 

Mix everything except for the puff pastry together and set aside. 

Open the crescent rolls, unroll the dough, and separate into four rectangles. Cut the rectangles in half crosswise so that they are squares. 

Spoon the filling into each square and fold to make a triangle. Pinch the edges to seal. 

Bake on greased cookie sheets for 10-15 minutes or until they are golden brown. 

Cool for 10 minutes prior to serving.
