  • 2 slices multigrain bread
  • 2 Tbs. reduced-fat goat cheese
  • 1 roasted red bell pepper
  • 3 paper-thin slices raw zucchini
  • 1 thin slice ripe tomato
  • 2 Tbs. alfalfa-radish sprouts

Spread goat cheese on 1 slice of the bread. Top with red bell pepper, zucchini, rip tomato and alfalfa-radish sprouts. Top with second slice of bread. Cut sandwich in half and wrap tightly in plastic wrap. Chill until ready to eat.
