Serving Size / Yield
- 2 slices multigrain bread
- 2 Tbs. reduced-fat goat cheese
- 1 roasted red bell pepper
- 3 paper-thin slices raw zucchini
- 1 thin slice ripe tomato
- 2 Tbs. alfalfa-radish sprouts
Spread goat cheese on 1 slice of the bread. Top with red bell pepper, zucchini, rip tomato and alfalfa-radish sprouts. Top with second slice of bread. Cut sandwich in half and wrap tightly in plastic wrap. Chill until ready to eat.
