Veggie Scrambled Eggs

I always look for something healthy and has no meat but high in protien and fiber. That is how I came up with this recipe. My son loves to help make this also and it is easy for him to make.

Ingredients

  • 9 eggs
  • 1/2 C. baby leaf spinach
  • 1/2 C. broccoli
  • 1/8 C. carrots
  • 1/8 C. mushrooms
  • 1/4 C. cherry tomatoes
  • 1/4 C. Onions
  • Dash of salt
  • Dash of pepper
  • 1 clove garlic, minced
  • 1 C. cheese

Directions

Break open eggs in a large mixing bowl, put in salt, pepper, and garlic. Mix all together. Dice up all veggies, put them in tne same bowl, and mix. Put in fry pan and cook to scramble. When done scrambling top with cheese and melt.
