Veggie Stuffed Pasta Shells
Serving Size / Yield
- 1 cup tomato, chopped
- 1 cup yellow pepper, chopped
- 1 cup cucumber, chopped
- lettuce, chopped
- 7-8 large pasta shells
- Vinaigrette of your choice
Start by cooking the noodles according to the directions and drain.
Mix all the vegetables in a bowls with the vinaigrette of your choice.
Spoon the salad into the shells.
Chill in the fridge for 5-10 minutes.
